How Our Bonbons Are Made: From Idea to Delight

At Chocnook, every bonbon starts with a spark — a memory, a flavour, a season, or even a single ingredient that calls out to be transformed into something delicious. Our goal is simple: to craft chocolate that feels personal, full of character, and always made with care.


1. The Inspiration Phase

Before a drop of chocolate is tempered, we dream. Sometimes it’s a fruit in season, a nostalgic dessert, or a traditional flavour from our roots in Argentina. Other times, it’s simply a pairing we’ve been curious to explore — like blackberry & vanilla, or coconut cream with mango. Each bonbon starts as an idea sketched out in flavours, colours, and textures.

2. Ingredient Sourcing

We use premium Belgian chocolate and natural ingredients — that means real fruit, nuts, dairy, and spices. No artificial flavours or essences. We believe chocolate is at its best when it's honest and pure, so we work in small batches to preserve freshness and flavour integrity.

3. Ganache & Filling Creation

The ganaches are where things get deliciously creative. We experiment with textures (smooth, creamy, chewy), balance sweetness with acidity or nuttiness, and layer flavours to make each bite exciting. For example, in our Spring Box, we paired tart blackberry with mellow vanilla, and bright mango with soft coconut cream. We often use fresh fruit or fruit purées — and never cut corners.

4. Mould Painting & Shell Creation

We hand-paint our moulds with coloured cocoa butter — it’s our way of bringing artistry into each bonbon. The chocolate shells are then cast, creating the delicate outer layer that holds the ganache. Every shell is made with care to ensure the perfect snap when you take a bite.

5. Filling & Capping

Once the shells are set, we fill them with ganache using piping bags for precision. After a short rest, they’re sealed with a thin layer of chocolate. Timing, temperature, and texture all matter — this step requires both patience and attention to detail.

6. Demoulding & Finishing

Demoulding is the magic moment — when the bonbons are released from their moulds, glossy and full of personality. From there, each bonbon is checked, polished if needed, and packed with care.

7. Packaging with Purpose

We believe presentation is part of the experience. Our packaging is simple, thoughtful, and handmade — often featuring boxes with windows, seasonal designs, or little legends describing the flavours inside.
